– Gut Kerkow –
Gut Kerkow is spot on in the scenic Schorfheide-Chorin biosphere reserve. According to the principle of holism, they operate extensive agriculture, which contributes to the preservation of the ecosystem. Forage cultivation, animal husbandry, slaughtering, processing and sales take place in one place. Not only our Angus cattle graze on their 900 hectares land. In addition to green fodder for the animals, they also grow various types of grain here according to ecological guidelines. With their own biogas plant, they supply their property with energy.
With the intention of managing the farm independently and in harmony with nature, Gut Kerkow is now run by a community of farmers, entrepreneurs and organic lovers. The initial spark came in 2015 from the Berlin cook Sarah Wiener, who and her partners took over the estate from farmer Johannes Niedeggen. With cattle breeding and dairy cow husbandry, he laid the foundation for natural management according to ecological guidelines.
They deliberately chose Aberdeen Angus cattle as their meat supplier. The Scottish breed of cattle has been bred since the 18th century. Their meat is fine-grained, tender and very intense in taste. They value their Angus cattle as culture animals. They like to be quiet and frugal in community. They graze with their young on lush pastures all year round. At Gut Kerkow they live in spacious, open stables and eat fresh grass in summer and silage from their fields in winter.
Artisanal processing
According to the tradition of the house butcher, they carefully use all parts of the animal. So they can
offer a wide range from precious parts to bouillon. Wherever their animals live, they also die in familiar surroundings. In this way you avoid long transports that are stressful. This is positively noticeable in the quality of the meat. They slaughter our property with calm and respect. In their own butcher’s shop, they use, sausage, ripen and package all meat products themselves.
They prepare their boiled sausage specialties within a few hours using the warm slaughter process. The pure and typical meat taste is preserved without the addition of additives such as nitrite curing salt or citrate.
Partner farms
At Gut Kerkow they devote themselves entirely to raising our Angus cattle. They make most of our products from their excellent meat. Few of her very familiar partners keep pigs, lambs and geese for her. They obtain their game from hunters in the vicinity. They pay attention to short distances and a minimum of stress for the animals. The slaughter takes place on their farm. Here they work traditionally and by hand.
